This was our second time food preparation to SEAL Ashram. We had to prepare food for 300 people with a timeline of 10 am, hence had to start a day earlier. Doodhi halwa was prepared the previous day evening followed by cutting of vegetables. 

Ingredients

  • Rice - 30 Kg
  • Toor dal - 6 Kg
  • Urad Dal - 3 Kg
  • Chana Dal - 3 Kg
  • Maosor Dal - 6 Kg
  • Moong Dal - 6 Kg
  • Aloo - 30 Kg
  • Pumpkin - 10 Kg
  • Tomato - 16 Kg
  • Green Peas - 8 Kg
  • Onion - 6 Kg
  • Rai - 500 gms
  • Jeera - 700 gms
  • Dhaniya powder - 1 Kg
  • Badishep - 250 gms
  • Chilli powder - 1 Kg
  • Jeera Powder - 500 gms
  • Ginger - 500 gms
  • Chillies - 500 gms
  • Kadipatta - 250 gms

Preparation
 

Doodhi Halwa

  • Remove skin and grate doodhi, leave the middle seeds part of the doodhi
  • Heat ghee and sauté kaju till they become mild brown and remove and keep separately
  • Sauté doodhi in ghee till it cooks a little. 
  • Add milk, sugar, elaichi powder and continue cooking
  • Stir till doodhi cooks and ghee starts separating out
  • Add Mawa and stir
  • Add Kaju and mix

Aloo Sabzi

  • Boil Potatoes, Pumpkin
  • Heat oil in a vessel, add rai, jeera, ginger, chillies and saute
  • Add tomato puree and saute
  • Add hing and dhaniya, badishep, jeera powder mixture and mix
  • Add chilli powder, salt and mix
  • Add green peas and mix
  • Add water to make the sabzi gravy liquidy
  • Bring gravy to boil

Dal

  • Soak toor dal, moong dal, masoor dal, chana dal, urad dal in water for 10 hours
  • Cook dal 
  • In another vessel, heat oil, add rai, tejpatta
  • Add jeera, chillies, red chillies and saute
  • Add onions and saute
  • Add haldi, ginger garlic paste, jeera powder, dhaniya powder and mix
  • Add tomatoes and mix
  • Add salt, chilli powder and mix
  • Add some water and bring to boil
  • Add above to dal and mix
  • Add kothmbir and mix
