Ingredients

  • Bread - 200
  • Potato - 7 Kg
  • Onion - 4 Kg
  • Tomato - 2 Kg
  • Pudina - 2 Big
  • Corriander - 2 Big
  • Chillies - 100 gms
  • Red Chillies - 50 gms
  • Jeera - 50 gms
  • Ginger - 100 gms
  • Garlic - 100 gms
  • Besan - 2.5 Kg
  • Cheese Slice - 100
  • Dhaniya Jeera Powder - 50 gms
  • Tamrind - 50 gms
  • Haldi powder, Chilli powder, Oil

Preparation

  • Red Chutney: In a vessel, heat oil, add onions, haldi and saute.
  • Then add tomatoes then saute. Add salt and little sugar and mix
  • Add chilli powder, mix and let the mixture cool
  • Grind above mixture along with red chillies in mixie
  • Green Chutney: Grind corriander, pudina, little onion, little tamrind and little chutney chana. Add salt and grind
  • Boil potatoes with salt
  • In another vessel, heat oil, add ginger, garlic, green chillies and saute
  • Add onions and saute
  • Add haldi, chilli powder, dhaniya jeera powder and mix
  • Add potatoes and mix
  • To make besan batter, mix besan, little hing, chilli powder and salt. Add water and mix to make batter lump free and liquidy
  • To make ulta vada pav, add green chutney on one slice, red chutney on another.
  • Place cheese slice and above potato bhaji between the 2 slices
  • Dip above bread sandwich in besan batter and fry
