Ingredients
- Rice - 8 Kg
- Potato - 6.5 Kg
- Lotus Stem - 1.5 Kg
- Sweet Potato - 2.5 Kg
- Brinjal - 4 Kg
- Jeera - 200 gms
- Dhaniya - 200 gms
- Badishep - 100 gms
- Ginger - 200 gms
- Chillies - 200 gms
- Rai - 100 gms
- Aamchur powder - 100 gms
- Ajwain - 50 gms
- Kasuri Methi - 100 gms
- Kothmbir - 2 Big
Preparation
- Boil potatoes, sweet potatoes
- Grind dhaniya, badishep, jeera into coarse powder
- Heat oil in a vessel, add rai, jeera, ginger, chillies and saute
- Add lotus stem, brijal and saute
- Add tomato puree and saute
- Add dhaniya, badishep, jeera powder mixture and mix
- Add chilli powder, salt and mix
- Add kasuri methi and mix
- Add boiled potatoes, sweet potatoes and mix
- Add water to make the sabzi gravy liquidy
- Bring gravy to boil
- Add kothmbir and mix
