Ingredients

  • Rice - 8 Kg
  • Potato - 6.5 Kg
  • Lotus Stem - 1.5 Kg
  • Sweet Potato - 2.5 Kg
  • Brinjal - 4 Kg
  • Jeera - 200 gms
  • Dhaniya - 200 gms
  • Badishep - 100 gms
  • Ginger - 200 gms
  • Chillies - 200 gms
  • Rai - 100 gms
  • Aamchur powder - 100 gms
  • Ajwain - 50 gms
  • Kasuri Methi - 100 gms
  • Kothmbir - 2 Big

Preparation

  • Boil potatoes, sweet potatoes
  • Grind dhaniya, badishep, jeera into coarse powder
  • Heat oil in a vessel, add rai, jeera, ginger, chillies and saute
  • Add lotus stem, brijal and saute
  • Add tomato puree and saute
  • Add dhaniya, badishep, jeera powder mixture and mix
  • Add chilli powder, salt and mix
  • Add kasuri methi and mix
  • Add boiled potatoes, sweet potatoes and mix
  • Add water to make the sabzi gravy liquidy
  • Bring gravy to boil
  • Add kothmbir and mix
