Ingredients

  • Oil
  • Rai 100gm
  • Jeera 100 gm
  • Kalaunji 10 gm
  • Methi dana 100 gm
  • Kadi patta 2 bunch
  • Ginger 500 gm
  • Green Chili 250 gm
  • Tomato 30 kg
  • Turmeric, Salt
  • Tej Patta
  • Fennel seeds 250 gm
  • Kashmiri Chili 100 gm
  • Clove
  • Dalchini 
  • Black Cardamom
  • Jaggery 1.5kg
  • Kothimbir 2 bunch

Preparation

  • Heat oil in a vessel. Add rai, jeera, kalonji, methi dana, kadi patta, and tej patta, and sauté.
  • Add ginger–chilli paste and sauté.
  • Add turmeric, salt, and Kashmiri chilli; mix well.
  • Add tomatoes (cut into large pieces) and cook.
  • Dry-roast fennel seeds, cloves, dalchini, and black cardamom; grind to a coarse powder and add to the mixture.
  • Add jaggery and mix.
