Ingredients
- Britannia Kulcha (Maida) - 70 packets
- White Vatana - 7 Kg
- Potato - 6 Kg
- Tomato - 4 Kg
- Onion - 5 Kg
- Tamrind - 600 gms
- Green chilles - 350 gms
- Kothmbir - 3 big
- Pudina - 4
- Ginger - 300 gms
- Garam Masala - 50 gms
- Mirchi powder - 100 gms
- Dhaniya Powder - 100 gms
- Jeera Powder - 50 gms
- Kala Namak - 50 gms
- Black pepper powder - 50 gms
- Chaat masala - 50 gms
- Ghee - 1 Kg
Preparation
- Soak vatana in water overnight
- In a vessel, add vatana, water, salt and cook
- When vatana is half cooked, add potato and let it boil
- Add hot water to tamrind and soak for sometime. Then filter with strainer
- Grind kothmbir, pudina, ginger, green chillies, salt and water
- When vatana is cooked, switch off gas, add green chutney, onions, tomato, tamrind pulp and mix
- Add chaat masla, dhaniya powder, garam masala, black pepper powder and mix
- Heat kulcha on tava and saute with ghee till crisp. Add kothmbir and serve
