Ingredients

  • Rice - 25 Kg
  • Tofu - 25 Kg
  • Toor dal - 5 Kg
  • Urad Dal - 2 Kg
  • Chana Dal - 2 Kg
  • Masoor Dal - 5 Kg
  • Moong Dal - 5 Kg
  • Onion - 6 + 20 Kg
  • Rai - 500 gms
  • Jeera - 700 + 400 gms
  • Ginger - 500 + 400 gms
  • Chillies - 500 + 200 gms
  • Kadipatta - 250 gms
  • Dry Red chilli - 100 gms
  • Tomato - 5 + 25 Kg
  • Jeera Powder - 500 + 200 gms
  • Dhaniya powder - 1 Kg + 400 gms
  • Kasuri Methi - 1.5 Kg
  • Kaju Tukda - 4 Kg
  • Fresh Cream - 12 Kg
  • Milk - 8 Lt + 100 Lt
  • Badi Elaichi - 200 gms
  • Green Peas - 12 Kg
  • Sugar - 16 Kg
  • OIl - 10 Lt
  • Haldi - 500 gms
  • Salt - 2 Kg
  • Ghee - 2 Kg
  • Citric Acid

Preparation

Milk Halwa

  • Boil milk and keep stirring continously
  • Add little citric acid and keep stirring
  • Add sugar and keep stirring
  • Keep cooking till the mixture becomes semi solid
  • The pour in vessel and let it cool for 10 hours

Methi Tofu

  • Cut Methi to small pieces and heat in a vessel till methi cooks a little
  • In another vessel, heat oil and add ginger, kaju tukda, onion and saute
  • Add tomato, chilli powder, salt and saute
  • Keep aside to cool
  • Add some water and grind to semi solid paste
  •  In another vessel, boil water and add green peas and cook for a few mins and keep aside
  • In another vessel, heat oil, add jeera, badi elaichi and saute
  • Then add above grinded paste and mix
  • Add dhaniya powder,  jeera powder, little chilli powder, salt, sugar and mix
  • Add methi and mix
  • After some time, add milk and mix
  • Add kasuri methi and mix
  • Add green peas and mix
  • Bring mixture to boil

Dal

  • Soak toor dal, moong dal, masoor dal, chana dal, urad dal in water for 10 hours
  • Cook dal 
  • In another vessel, heat oil, add rai, tejpatta
  • Add jeera, chillies, red chillies and saute
  • Add onions and saute
  • Add haldi, ginger garlic paste, jeera powder, dhaniya powder and mix
  • Add tomatoes and mix
  • Add salt, chilli powder and mix
  • Add some water and bring to boil
  • Add above to dal and mix
  • Add kothmbir and mix
