Ingredients

  • Tofu - 12 Kg
  • Onions - 5 Kg
  • Curd - 12 Kg
  • Jeera Powder - 100 gms
  • Dhaniya Powder - 250 gms
  • Dalchini - 50 gms
  • Bay leaf - few
  • Pepper - 200 gms
  • Hing - 100 gms
  • Ginger - 250 gms
  • Garlic - 200 gms
  • Green chillies - 250 gms
  • Corriander - 2 Big
  • Chutney chana - 1 Kg

Preparation

  • Heat oil in vessel and add ginger, garlic
  • Add chillies, kadipatta, onions and saute
  • Let the above cool, then mix with curd (6 Kg), corriander, chutney chana and grind in mixer
  • Heat oil in vessel, add dalchini, Tejpatta and saute
  • Add above grinder mixture and mix
  • Add jeera powder, dhaniya powder, malvani powder and mix
  • Add remaining curd and mix
  • Bring mixture to boil
  • Cut tofu into vertical long pieces and add pepper powder, chilli powder and salt and keep aside
  • Shallow fry tofu and then mix with gravy
