Ingredients

  • Tofu - 10 Kg
  • Pudina Mayo - 2 Kg
  • Aloo - 8 Kg
  • Brinjal - 3 Kg
  • Mutter - 2 Kg
  • Tomato - 2 Kg
  • Onion - 4 Kg
  • Green chillies - 200 gms
  • Garlic - 200 gms
  • Ginger - 100 gms
  • Cabbage - 3 Kg
  • Jeera powder - 100 gms
  • Dhaniya Powder - 200 gms
  • Jeera - 200 gms
  • Rai - 100 gms

Preparation

  • Mash ginger, garlic, chillies
  • In a vessel, heat oil, add rai and wait till splutter
  • Add jeera and saute
  • Add above mashed ginger garlic paste
  • Add onions and saute
  • Add haldi, chilli powder and saute
  • Add tomatoes and saute
  • Add jeera powder, dhaniya powder and mix
  • Add mutter and mix
  • Fry brinjal and add
  • Add boiled and mashed potatoes
  • Keep mixing till potatoes and brinjal are fully cooked
  • Cut tofu into long vertical pieces, add salt, haldi, dhaniya powder and chilli powder and mix
  • Shallow fry tofu in medium flame
  • To make roll, add a layer of pudina mayo on bhakri, add tofu, potato brinjal sabzi, raw cabbage, onions and roll
