Ingredients

  • Brinjal - 8 Kg
  • Potato - 6 Kg
  • Tomato - 6 Kg
  • Onion - 4 Kg
  • Garlic - 250 gms
  • Ginger - 200 gms
  • Green chillies - 200 gms
  • Chilli powder - 200 gms
  • Jeera powder - 100 gms
  • Dhaniya Powder - 200 gms
  • Jeera - 200 gms
  • Rai - 100 gms
  • Shengana - 100 gms
  • Sweet boondi - 4 Kg
  • Khoa - 4 Kg
  • Kaju - 500 gms
  • Kismis - 500 gms

Preparation

Aloo Baingan

  • Mash ginger, garlic, chillies
  • Grind shengana coarsely
  • In a vessel, heat oil (lots of oil), add rai and wait till splutter
  • Add jeera and saute
  • Add above mashed ginger garlic paste + shengana
  • Add onions and saute
  • Add haldi, chilli powder and saute
  • Add tomatoes and saute
  • Add jeera powder, dhaniya powder and mix
  • Fry potato and add 
  • Fry brinjal and add
  • Keep mixing till potatoes and brinjal are fully cooked

Boondi Mawa

  • Heat ghee in a vessel and add kaju
  • Saute till kaju turns light brownish, then add kismis, saute and keep aside
  • Mix sweet boondi and mawa and saute
  • Add kaju, kismis and mix
