Ingredients

  • Palak - 6 Kg
  • Tofu - 10 Kg
  • Onion - 4 Kg
  • Tomato - 4 Kg
  • Garlic - 500 gms
  • Ginger - 250 gms
  • Corriander - 1 Big
  • Green chillies - 200 gms
  • Jeera - 200 gms
  • Dhaniya powder - 200 gms
  • Jeera powder - 100 gms
  • Fresh cream - 1 Kg
  • Hing - 50 gms
  • Chilli powder - 250 gms
  • Ghee - 250 gms

Preparation

  • Boil water, add Palak and cook for few minutes
  • Remove palak and immediately put in cold water
  • Squeeze water and let it cool
  • Grind palak, corriander, pudina, ginger and green chillies to  paste
  • Cut tofu into large pieces, add salt, haldi, dhaniya powder and chilli powder and mix
  • Shallow fry tofu in medium flame
  • Heat oil, add jeera, hing, garlic and saute
  • Add onion and saute
  • Add haldi, dhaniya powder, jeera powder, chilli powder and mix
  • Add tomatoes and saute
  • Add above palak paste and cook
  • Add fresh cream and mix
  • Add fried tofu and mix
  • In another vessel, heat ghee and add garlic (vertically cut into 2 pieces) and saute till garlic turns brown
  • Add above ghee + garlic to above palak tofu and mix
