Ingredients
- Palak - 6 Kg
- Tofu - 10 Kg
- Onion - 4 Kg
- Tomato - 4 Kg
- Garlic - 500 gms
- Ginger - 250 gms
- Corriander - 1 Big
- Green chillies - 200 gms
- Jeera - 200 gms
- Dhaniya powder - 200 gms
- Jeera powder - 100 gms
- Fresh cream - 1 Kg
- Hing - 50 gms
- Chilli powder - 250 gms
- Ghee - 250 gms
Preparation
- Boil water, add Palak and cook for few minutes
- Remove palak and immediately put in cold water
- Squeeze water and let it cool
- Grind palak, corriander, pudina, ginger and green chillies to paste
- Cut tofu into large pieces, add salt, haldi, dhaniya powder and chilli powder and mix
- Shallow fry tofu in medium flame
- Heat oil, add jeera, hing, garlic and saute
- Add onion and saute
- Add haldi, dhaniya powder, jeera powder, chilli powder and mix
- Add tomatoes and saute
- Add above palak paste and cook
- Add fresh cream and mix
- Add fried tofu and mix
- In another vessel, heat ghee and add garlic (vertically cut into 2 pieces) and saute till garlic turns brown
- Add above ghee + garlic to above palak tofu and mix
