Ingredients

  • Potato - 8 Kg
  • Onion - 4 Kg
  • Tomato - 3 Kg
  • Cauliflower - 4 Kg
  • Mushroom - 6 Kg
  • Green Peas - 2 Kg
  • Coconut - 6
  • Double Horse Palappam Mix - 5 Kg
  • Ginger - 250 gms
  • Garlic - 250 gms
  • Corriander - 2 Big
  • Green Chillies - 300 gms
  • Dhaniya Powder - 200 gms
  • Jeera Powder - 100 gms

Preparation

Appam

  • Mix 0.5 kg appam powder with 4 table spoon sugar, 1/2 tea spoon salt and 850 ml luke warm water and grind in a mixer for 1 minute
  • Keep batter aside for 1 hour to ferment

Xacuti

  • Mash ginger, garlic, chilli
  • Grind corriander to make paste
  • In a vessel, heat oil, add onions and saute
  • Then add coconut and tomatoes and saute
  • After cooling above mixture, add xacuti powder (similar to garam masala), water and grind to semi liquid paste
  • In another vessel, heat oil
  • Add potatoes and saute
  • Add mashed ginger, garlic chilli and corriander paste and mix
  • Add above coconut paste and mix
  • When potatoes are half cooked, add cauliflower and cook
  • When potatoes and cauliflower are cooked add mushroom and cook
