Ingredients

  • Rice - 8 Kg
  • Tofu - 5 Kg
  • Mushroom - 4 Kg
  • Simla Mirch - 4 Kg
  • Yellow & Red bell peppers - 2 Kg
  • Brocoli - 4 Kg
  • Corn - 2 Kg
  • Onion - 3 Kg
  • Garlic - 500 gms
  • Green Chillies - 300 gms
  • Kothmbir - 2 Big
  • Oregano - 200 gms
  • Chilli Flakes - 100 gms
  • Jeera powder - 100 gms
  • Dhaniya powder - 200 gms
  • Maida - 1 Kg
  • Milk - 10 Lt
  • Butter - 2 Kg
  • Cream - 2 Lt
  • Garam Masala - 100 gms
  • Lemon - 40
  • Aamchur powder - 100 gms

Preparation

Lemon Corriander Rice 

  • Soak rice in water for 1 hour
  • Boil water, add salt and cook rice
  • In a vessel, heat butter
  • Add garlic, green chillies and saute
  • Add onion and saute
  • Add oregano, chilli flakes and saute
  • Add kothmbir and mix
  • Add rice and mix
  • Add lemon juice and grated skin and mix
  • Add little salt and mix

Veggies Sauce

  • In a vessel, heat oil
  • Add brocoli and saute
  • Add tofu, bell peppers, mushroom and saute
  • Add corn and saute
  • Keep the veggies aside
  • In another vessel, heat butter + oil
  • Slowly add maida and keep stirring
  • Slowly add milk and keep stirring removing any lumps
  • Add cream and cook
  • Add jeera powder, dhaniya powder, chilli powder, oregano, garam masala and mix
  • Add aamchur powder and mix
  • Add above veggies and mix
