Ingredients

  • Britannia Kulcha (Maida) - 70 packets
  • White Vatana - 7 Kg
  • Potato - 6 Kg
  • Tomato - 4 Kg
  • Onion - 5 Kg
  • Tamrind - 600 gms
  • Green chilles - 350 gms
  • Kothmbir - 3 big
  • Pudina - 4
  • Ginger - 300 gms
  • Garam Masala - 50 gms
  • Mirchi powder - 100 gms
  • Dhaniya Powder - 100 gms
  • Jeera Powder - 50 gms
  • Kala Namak - 50 gms
  • Black pepper powder - 50 gms
  • Chaat masala - 50 gms
  • Ghee - 1 Kg

Preparation

  • Soak vatana in water overnight
  • In a vessel, add vatana, water, salt and cook
  • When vatana is half cooked, add potato and let it boil
  • Add hot water to tamrind and soak for sometime. Then filter with strainer
  • Grind kothmbir, pudina, ginger, green chillies, salt and water
  • When vatana is cooked, switch off gas, add green chutney, onions, tomato, tamrind pulp and mix
  • Add chaat masla, dhaniya powder, garam masala, black pepper powder and mix
  • Heat kulcha on tava and saute with ghee till crisp. Add kothmbir and serve
