Ingredients
- Lauki - 13 Kg
- Besan - 1 Kg
- Tomato - 8 Kg
- Onion - 5 Kg
- Ginger - 250 gms
- Garlic - 250 gms
- Green chillies - 250 gms
- Ajwain - 200 gms
- Dhaniya Powder - 200 gms
- Jeera - 100 gms
- Kothmbir - 2 big
- Hing - 100 gms
- Garam Masala - 50 gms
- Kasuri Methi - 50 gms
Preparation
- Grate lauki, squeeze water and keep the water aside
- Add ginger and green chiliies
- Add haldi, little ajwain, little garam masala and mix
- Add salt, besan and mix
- Do not squeeze much, roll and make balls
- Fry on low flame
- In another vessel, heat oil
- Add jeera, ginger, garlic, green chillies and saute
- Add onion and saute
- Add besan and keep mixing
- Add lauki water and mix
- Add haldi, dhaniya powder, chilli powder and mix
- Add tomatoes, salt and cook
- Add kasuri methi and mix
- Add aamchur powder, dhaniya and mix
