Ingredients

  • Basmati Rice - 8 Kg
  • Curd - 11 Kg
  • Milk - 3 Lt
  • Pomegranate - 10
  • Grapes - 3 Kg
  • Coconut - 3
  • Rai - 150 gms
  • Kothmir - 1 big
  • Green chillies - 100 gms
  • Kadipatta - 10 twigs
  • Salt, Oil, Sugar

Preparation

  • Soak Rice in water for around 1 hour.
  • Cook rice in vessel (add salt and little oil) such that rice is covered in water and only a little above rice level
  • Once cooked, remove rice, rinse in cold water and spread so that rice cools down
  • Add some oil to rice, so that it does not stick
  • In another vessel, add milk, curd, coconut, salt and mix. Add some water to make it semi solid, not too watery
  • Mix pomegrante and grapes (grapes cut in half vertically) with curd
  • Add rice and mix
  • Heat oil/ghee, add rai and wait for splutter
  • Add jeera, kadipatta, chillies and saute. Add to rice
  • Add some ice to the curd rice, so that it gets cool
