Ingredients

  • White Vatana - 5 Kg
  • Black chana - 3 Kg
  • Potato - 6 Kg
  • Onion - 3 Kg
  • Tamrind - 600 gms
  • Jaggery - 1 Kg
  • Amchur - 100 gms
  • Green chilles - 350 gms
  • Kothmbir - 2 big
  • Pudina - 4
  • Chutney Chana - 500 gms
  • Chilli Powder - 50 gms
  • Thin sev - 1 kg

Preparation

  • Soak white vatana and black chana overnight
  • Add Salt, Vatana, Chana to water and cook.
  • Once cooked, add boiled potatoes, chilli powder, jeera powder, aamchur powder and mix
  • In another vessel, soak tamrind in hot water for 30 mins
  • Squeeze tamrind and filter
  • Mix jaggery and little chilli powder to make tamrind sauce
  • Grind chutney chana, ginger in mixer
  • Add chillies, kothmbir, pudina, salt, little sugar and water and grind to make chutney
  • To serve, add ragada, green chutney, little tamrind chutney, nylon sev and some kothmbir
