Ingredients
- Potato - 6 Kg
- Jeera powder - 100 gms
- Green Peas - 2 Kg
- Maida - 4Kg for samosa
- Ajwain - 50 gms
- Saunf - 100 gms
- Dhaniya powder - 100 gms
- Corriander - 1 Big
- Ginger - 200 gms
- Chillies - 100 gms
- Dates - 4 Kg
- Milk - 4.5 Lt
- Olive Oil - 2 Lt
- Curd - 750 gms
- Atta - 3 Kg
- Baking powder - 12 tsp
- Baking Soda - 6 tsp
- Walnuts - 500 gms
Preparation
Dates and Walnut Cake
- Soak dates in hot milk
- Grind to fine and thick paste
- Add olive oil and curd to this dates paste and blend with blender
- Add atta, baking powder and baking soda and blend
- Add milk as needed and blend
- Add walnut and date pieces and mix
- Place butter paper in vessel and pour above mixture into it
- Smear walnut pieces on top of the above mixture
- Bake for 2 hours
Samosa
- Add Maida, ajwain, salt, ghee and mix
- Add water little by little and mix. Do not make it too soft or watery, It should be thick and strong.
- Smear ghee on the flour and keep aside for 30 mins
- Grind saunf
- In another vessel, add oil, ginger, green chillies and saute
- Mash potatoes and mix.
- Add green peas and mix
- Add jeera powder, dhaniya powder, saunf powder and mix
- Make medium size balls from the flour, smear little oil and make chappati.
- Cut the chappati into half
- Apply little water to the edges to make it moist
- Fold to form a cone and add potato bhaji and press all sides to ensure there are no openings
