Ingredients
- Tofu - 12 Kg
- Onions - 5 Kg
- Curd - 12 Kg
- Jeera Powder - 100 gms
- Dhaniya Powder - 250 gms
- Dalchini - 50 gms
- Bay leaf - few
- Pepper - 200 gms
- Hing - 100 gms
- Ginger - 250 gms
- Garlic - 200 gms
- Green chillies - 250 gms
- Corriander - 2 Big
- Chutney chana - 1 Kg
Preparation
- Heat oil in vessel and add ginger, garlic
- Add chillies, kadipatta, onions and saute
- Let the above cool, then mix with curd (6 Kg), corriander, chutney chana and grind in mixer
- Heat oil in vessel, add dalchini, Tejpatta and saute
- Add above grinder mixture and mix
- Add jeera powder, dhaniya powder, malvani powder and mix
- Add remaining curd and mix
- Bring mixture to boil
- Cut tofu into vertical long pieces and add pepper powder, chilli powder and salt and keep aside
- Shallow fry tofu and then mix with gravy
