Ingredients
- Basmati rice - 8 Kg
- Star Anise - 50 gms
- Onion - 5 Kg
- Garlic - 250 gms
- Ginger - 200 gms
- Soya Sauce - 700 ml
- Vinegar - 100 ml
- Green chillies - 200 gms
- White pepper powder - 150 gms
- Baby corn - 2 Kg
- Carrot - 4 Kg
- Zuccini - 3 Kg
- Mixed bell peppers - 3 (green) + 2 (yellow + red) Kg
- Button mushrooms - 5 Kg
- Broccoli - 4 Kg
- Bok Choy leaves - 1 Kg
- Spring Onions - 2 Kg
- Cornflour - 1 Kg
- Manchow soup powder - 10 packets
Preparation
- Soak rice in water in 1 hour
- Fill water in a vessel and add star anise, green chillies and oil. Bring it to boil
- Add salt and rice and cook. Remove rice from water and keep aside.
- In another vessel, heat oil. Add star anise, ginger, garlic, green chillies and saute
- Add onions and saute
- Add water and mix
- Add white pepper powder, manchow soup powder, soya sauce, vinegar, salt and mix
- Add carrot and cook
- When carrot is half cooked, add baby corn
- When carrot is cooked, add bell peppers, zuccini, mushrooms, broccoli, bok choy leaves, spring onions
- Mix cornflour in water and mix to make slurry and mix
- Heat for 10 mins
