Ingredients

  • Basamati Rice - 7 Kg
  • Tomato - 8 Kg ( 3 Kg for salsa  )
  • Onion - 5 Kg ( 1.5Kg for salsa  )
  • Yellow bell peppers - 2 Kg
  • Red bell peppers - 2 Kg
  • Simla Mirch - 2.5 Kg
  • Rajma - 4 Kg
  • Corn - 3 Kg
  • Curd - 2 Kg
  • Cream - 2 Kg
  • Nachos - 2 Kg
  • Oregano - 300 gms
  • Green chillies - 150 gms
  • Kothmbir - 2 big
  • Tomato ketchup - 1 big, 1 small
  • Garlic - 200 gms
  • Dhaniya jeera powder - 200 gms
  • Lemons - 10 big
  • Salt, Oil, chilli powder

Preparation

  • Make tomato puree 2 Kg
  • Heat oil and saute garlic, chillies
  • Add onions and saute
  • Add tomato puree and saute
  • Mix tomato pieces and saute
  • Turn off flame and add kothmbir, ketchup, lime juice, oregano and salt. Salsa is ready
  • Mix cream, curd, crushed garlic, green chillies, lemon, oregano and salt. Sour cream is ready.
  • Heat oil in a vessel, add garlic, onions and saute
  • Add green, red, yellow bell peppers, dhaniya jeera powder and saute. Do not cook fully.
  • Add tomato puree, salt chilli powder, oregano and saute. Mix rice
  • In another vessel, cook rajma. Add chilli powder, dhaniya jeera powder, oregano and mix. Remove all water from rajma
  • To serve, add rice, top with rajma, salsa and sour cream.
