Ingredients
- Potato - 6 Kg
- Jeera powder - 100 gms
- Green Peas - 2 Kg
- Maida - 8 Kg ( 4Kg for samosa + 4 Kg for pancake)
- Rawa (bareek) - 100 gms
- Ajwain - 50 gms
- Saunf - 100 gms
- Dhaniya powder - 100 gms
- Sugar - 1 Kg
- Baking powder - 50 gms
- Baking soda - 2 tsp
- Butter - 1 Kg
- Ghee - 1 Kg
- Milk - 4.5 Lt
- Kaju tukda - 0.5 Kg
- Jaggery - 2 Kg
- Vanilla essence - 5 ml
Preparation
Pancake
- Grind sugar to powder
- Mix maida, baking powder, baking soda, sugar powder and little salt
- Add melted butter and mix
- Add milk and mix
- Keep mixing till batter consistency is semi solid
- Pour on tawa and do not spread
- Add butter and turn
- To make syrup, boil water and add jaggery
- Add vanilla essence and keep mixing
- Keep boiling till liquid becomes syrupy
- Add syrup to pancake and serve
Samosa
- Mix maida and rawa
- Add ajwain, salt, ghee and mix
- Add water little by little and mix. Do not make it too soft or watery, It should be thick and strong.
- Smear ghee on the flour and keep aside for 30 mins
- Grind saunf
- In another vessel, add oil, ginger, green chillies and saute
- Mash potatoes and mix.
- Add green peas and mix
- Add jeera powder, dhaniya powder, saunf powder and mix
- Make medium size balls from the flour, smear little oil and make chappati.
- Cut the chappati into half
- Apply little water to the edges to make it moist
- Fold to form a cone and add potato bhaji and press all sides to ensure there are no openings
