Ingredients

  • Potato - 12 Kg
  • Paneer - 4 Kg
  • Onion - 4 Kg
  • Chaat Masala - 200 gms
  • Green chillies - 200 gms
  • Ginger - 200 gms
  • Garlic - 200 gms
  • Vinegar - 300 ml
  • Dhaniya - 1 Big
  • Schezwan Sauce - 2 Kg
  • Pepper powder - 50 gms
  • Butter - 1.5 Kg
  • Chilli Powder - 100 gms
  • Maida - 5.5 Kg
  • Cornflour - 1.25 Kg
  • Milk Powder - 1.25 Kg
  • Baking powder - 20 gms
  • Mayo - 750 gms

Preparation

Tortilla

  • Mix maida, cornflour, milk powder, salt and little sugar
  • Add baking powder, water and mix. Knead till dough is soft and sticky
  • Add oil to the dough and knead till its soft and non sticky
  • Smear oil on the dough and let it rest for 1 hour.
  • Make big balls and smear with oil and keep aside for 15 mins
  • Roll into big round shape and heat on tawa. Do not completely cook the tortilla, just heat and keep aside

Potato filling  

  • Boil potatoes and remove skin
  • In another vessel, heat oil, add garlic, ginger and saute
  • Add chaat masala, haldi, jeera powder and saute
  • Add mashes potatoes and mix
  • Add salt, chilli powder and mix

Frankie 

  • Cut paneer in to small pieces
  • Add haldi, chilli powder, jeera powder, salt and mix
  • Add cornflour and mix
  • Fry paneer and keep aside
  • Cut chillies and add in vinegar and keep aside
  • Mix sczhewan sauce and mayo and keep aside
  • Put butter on tawa and heat tortilla till fully cooked
  • Put tortilla aside
  • Smear mayo schezwan sauce on the tortilla
  • Add above potato filling in the middle
  • Add vinegar + chilli mixture
  • Add onions
  • Roll tortilla and pack
