Ingredients

  • Maida - 6 Kg
  • Green Peas - 2 Kg ( 1 for kachori, 1 for sabzi )
  • Ghee - 1 Kg
  • Jeera - 100 gms
  • Dhaniya - 200 gms
  • Badishep - 100 gms
  • Onion - 3 Kg
  • Potato - 8 Kg ( 2 for kachori, 6 for sabzi )
  • Tomato - 2 Kg
  • Ginger - 200 gms
  • Kothmbir - 2
  • Chillies - 100 gms
  • Tejpatta, pepper, hing, lavang, ajwain

Preparation

Kachori Filling

  • Boil potatoes
  • Heat oil in a vessel, add jeera, ginger, chillies and saute
  • Add onion and saute
  • Grind dhaniya, badishep, jeera in a mixer coarsely
  • Add above mixture and saute
  • Add green peas and saute
  • If mixture is moist/liquidy add some besan to make it little dry

Kachori 

  • Add maida, ajwain, salt and mix
  • Add ghee and keep mixing
  • Add some water and mix till dough is soft
  • Keep aside for 30 mins
  • Make large balls and flatten and add kachori filling and cover and pat in hand to make it flat
  • Fry on low flame

Aloo Sabzi

  • Boil Potatoes
  • Heat oil in a vessel, add rai, jeera, ginger, chillies and saute
  • Add tomato puree and saute
  • Add hing and dhaniya, badishep, jeera powder mixture and mix
  • Add chilli powder, salt and mix
  • Add green peas and mix
  • Add water to make the sabzi gravy liquidy
  • Bring gravy to boil
