Ingredients
- Maida - 6 Kg
- Green Peas - 2 Kg ( 1 for kachori, 1 for sabzi )
- Ghee - 1 Kg
- Jeera - 100 gms
- Dhaniya - 200 gms
- Badishep - 100 gms
- Onion - 3 Kg
- Potato - 8 Kg ( 2 for kachori, 6 for sabzi )
- Tomato - 2 Kg
- Ginger - 200 gms
- Kothmbir - 2
- Chillies - 100 gms
- Tejpatta, pepper, hing, lavang, ajwain
Preparation
Kachori Filling
- Boil potatoes
- Heat oil in a vessel, add jeera, ginger, chillies and saute
- Add onion and saute
- Grind dhaniya, badishep, jeera in a mixer coarsely
- Add above mixture and saute
- Add green peas and saute
- If mixture is moist/liquidy add some besan to make it little dry
Kachori
- Add maida, ajwain, salt and mix
- Add ghee and keep mixing
- Add some water and mix till dough is soft
- Keep aside for 30 mins
- Make large balls and flatten and add kachori filling and cover and pat in hand to make it flat
- Fry on low flame
Aloo Sabzi
- Boil Potatoes
- Heat oil in a vessel, add rai, jeera, ginger, chillies and saute
- Add tomato puree and saute
- Add hing and dhaniya, badishep, jeera powder mixture and mix
- Add chilli powder, salt and mix
- Add green peas and mix
- Add water to make the sabzi gravy liquidy
- Bring gravy to boil
