Ingredients
- Ponk - 7 Kg
- Besan - 1 Kg
- Rice Flour - 1 Kg
- Chana Dal - 1 Kg
- Kothmbir - 4 Big
- Ginger - 400 gms
- Garlic - 200 gms
- Chillies - 400 gms
- Lemon - 5 big
- Chutney Chana - 1 Kg
- Shengana - 1 Kg
- Tamrind - 300 gms
- Pudina - 4 Big
- Onion - 4Kg
- Chilli Powder, Salt
Preparation
- Soak Chana dal in water for 3-4 hours
- Grind chana dal to thick paste without any water or as little water as possible
- Grind 6 Kg ponk to thick paste without any water
- Grind Ginger and chillies
- Mix ponk paste, chana dal paste, ginger and chilly paste, little garlic paste and lemon
- Add Besan, rice flour, lemon juice, salt, chilli powder and mix to thick consistency batter
- Add ungrinded ponk and mix
- Make small balls and fry
- To make chutney, grind chutney chana, shengana, tamrind, onion, chillies and ginger with little water
- Add kothmbir, pudina, salt, sugar, water and grind
