Ingredients

  • Basmati Rice - 8 Kg
  • Jaggery - 7 Kg
  • Ghee - 1 Lt
  • Kaju - 700 gms
  • Black Raisins - 300 gms
  • Badam - 500 gms
  • Badishep - 200 gms
  • Dry Coconut - 300 gms
  • Potatoes - 5 Kg
  • Chilli powder, Salt, Haldi, Corriander powder

Preparation

  • Wash rice and soak in water for 1 hour
  • Heat ghee and sauté for Kaju, Badam. After Kaju becomes brown add raisins and then keep them aside
  • In ghee, add rice and mix
  • In another container, add water (a little more than double quantity rice) and jaggery and heat till jaggery melts
  • Put this jaggery water into ghee + rice mixture and cook
  • When rice is 75% cooked, add badishep, dry coconut
  • When almost cooked, add Kaju, Badam and raisins and mix

Aloo Fry

  • Cut into slices and fry
  • Mix fried slice in mixture of chilli powder, haldi, salt and corriander powder
