Ingredients
- Maida - 7Kg
- Kabuli Chana - 6Kg
- Rava - 1Kg
- Curd - 3 Kg
- Tamrind Paste - 200 gm
- Potato - 3Kg
- Onion - 3Kg
- Tomato - 6 Kg
- Chole Masala - 200 gm
- Aamchur powder - 100 gm
- Jeera Powder - 200 gm
- Jeera - 100 gms
- Jaggery - 500 gm
- Kothmbir - 1
- Baking soda - 10 gm
- 3 Tea bags
- Turmeric powder
- Chilli powder - 100 gms
- Dhaniya powder - 100 gms
- Tejpatta, Pepper, Dalchini - few
Preparation
Chole
- Soak Kabuli chana in water and soak for 10 hours. Add little oil, tejpatta, dalchini and pepper
- Cook Kabuli chana and potatoes together. Add oil, pepper, tea bags and salt. Remove tea bag after cooking.
- In a separate vessel, add oil, jeera and onions and saute till brown. Add turmeric and chilli powder.
- Make Tomato puree and add. Add chole masala, salt, jeera powder, dhaniya powder.
- Add jaggery and cook till oil separates
- Add chole, potatoes and mix
- If gravy is too watery, mash chana and potatoes to make the gravy thick.
Bhatura
- Mix maida, rava, baking soda and curd
- Add water as needed and mix
- Do not put too much pressure, add oil and keep the dough aside for 1.5 hours
- Make small balls and roll like poori
- Fry
