Ingredients
- Mawa - 4Kg
- Maida - 2.5 Kg
- Sugar - 5 Kg
- Elaichi Powder - 50 gm
- Tamrind - 1 Kg
- Jaggery - 2 Kg
- Badam - 0.5 Kg
- Milk - 10 Lt
- Curd - 1.5 Kg
- Bread - 10 packets
- Sehzuan Chutney
- Jeera Powder - 100 gms
- Chilli Powder - 100 gms
- Black Pepper Powder - 50 gms
- Salt
Preparation
Mawa Malpua
- Mix maida with 6 Lt milk, mix by adding maida little by little so that there are no lumps.
- Mix till the batter consistency is semi solid and without lumps.
- In another tray, mix mawa with elaichi powder
- Make flat rounded shaped mawa shapes
- In another vessel, add sugar and water in 1:1 ratio and heat
- Keep mixing the sugar and water till sugar melts and water comes to boil
- Check sugar syrup consistency, it should not be too sticky
- Dip mawa ball in batter and fry on medium flame
- After frying dip the fried malpua in sugar syrup for 2 mins and then remove. Keep the sugar syrup on low heat so that its hot.
- Garnish it with small pieces of badam
Bread Dahi Wada
- Soak tamrind in warm water for 10-20 mins
- Grind the tamrind and water mixture and filter out the pulp
- Mix tamrind extract with jaggery, chilli powder, jeera powder and salt and grind to slightly thick paste
- In another vessel, mix curd and sechzuan chutney
- Dip bread in milk and squeeze it to make a ball
- On this ball put tamrind paste, curd and sprinkle chilli powder
